Grilled Veggie Sandwich

    Grilled veggie sandwich is very easy and simple. This combo of vegetables gives a nice crunchy bite and  potato lovers will definitely relish it.

Serves up to 2 people
Preparation time: 10 minutes

Ingredients:

4 pieces of bread
100 grams of yellow squash
 100 grams of zucchini
1 small sized-potato

2 thin slices of fresh mozzarella
1-2 tsp of green chilly sauce
2 tsp of melted butter 
1 tsp of olive oil
salt as required


Preparation:

1.Cut the vegetables(squash, zucchini,potato) in to thin slices and cut them diagonally in to 4 pieces. 
2.Heat oil in the pan and add the veggies. Saute for 5 minutes sprinkle the salt. Add 1tsp of green chilly sauce to the vegetables (1-2 tsp as per spice level).
3.Apply melted butter to the bread. Place the veggies on the bread. Keep the slice of mozzarella on top of the veggies. Close with another bread and place it on the pan.
4.Toast the bread on both the sides of the pan. With the melted cheese and grilled veggies gives wonderful taste.

Italian Sandwich

        Today I was in the mood of cooking something different. I always love Italian cooking pasta, sandwiches, pizza.... Enjoy grilling!



Serves up to 3
Ingredients:

10 pieces of Asparagus
sea-salt for seasoning
salt as required

Pesto:
1 small cup of basil
3 cloves of garlic
1 tbsp of pinenuts
1 tbsp of olive oil
1 tsp of vinegar/ 1tsp of lime juice
salt as required
crushed pepper


Grilling:
1 minced garlic
1 red pepper
1 red onion
1 green pepper
red pepper flakes
any hot sauce
crushed pepper
salt as required
1 tbsp olive oil
3 tbsp shredded Italian blend cheese
1 tbsp of melted butter
6 pieces of bread


Preparation:

1. Grind the ingredients coarsely, mentioned in pesto altogether. The pesto is ready.
2. In the preheated pan, add the minced garlic. Saute for 2 minute then add the red pepper, green pepper and onion (cut lengthwise). 3.Add 1 tbsp of crushed pepper, red pepper flakes and salt. Saute for 5 minutes.
4.Take the bread, spread pesto on one side and melted butter on the other. keep the sauteed vegetables on the bread. Add the 1 tbsp of cheese on the top. Close with the other bread. 
5.The bread can be grilled on the pan, sandwich maker/ panini press. Grill till the bread is golden brown. Serve with chips and dill pickle.
4.In the preheated pan, add olive oil and asparagus saute for 5 minuted till it is wilted. Transfer to a plate and sprinkle salt and sea-salt seasoning. This is just a side for the sandwich.
